Summer is almost here. That means summer bodies need to be whipped into existence and it’s going to be that much harder when you’re like us and are CONSTANTLY craving a hunk of dark chocolate every afternoon at 3:45pm. What can be done to satisfy the sweet tooth that’s still waistline-friendly?

Granola Banana Pops!

This recipe, using Viki’s Granola – our favorite because it’s gluten free and made with 100% all natural ingredients – is super simple and fun to do with friends, family, and especially kids if you have a brood of your own, or just happen to be babysitting. And, it’s idiot-proof so you actually can’t mess it up.

Ingredients:
4 Bananas
3 tablespoons Viki’s Banana Walnut Granola
6 ounces dark chocolate chips or shards (unsweetened or a higher percentage of cocoa is healthier)
8 Popsicle sticks

Get To Work:
– Cut bananas in half
– Peel, bananas and insert Popsicle sticks. Place on a parchment-lined tray, cover with plastic wrap and freeze for about 3 hours.
– Place Viki’s Banana Walnut Granola into a shallow dish.
– Melt chocolate in a double boiler over slightly simmering water, over low heat, constantly stirring.
– Pour the chocolate into a tall glass. Dip each banana into the chocolate and roll in the granola straightaway. Place on a parchment-lined tray. Serve immediately or wrap individually in parchment paper or plastic wrap to be put back in the freezer for later consumption.
